Learning Chinese on my own

Native Mandarin Chinese speaker but I cannot read/write since I was raised in USA (go figure with the stupid English only policy many people in this country hold) and this is helping me improve my proficiency in Chinese. For Americans who want to learn, this is really helpful.

Easy recipes that produce delicious recipes- update

This cookbook is full of the kind of recipes one would get out in a restaurant, from egg drop soup to orange chicken, only you, yes you, can make these at home. Low has demystified the sauces, the ingredients, and the techniques to make the recipes achievable, and yes, easy. This isn't a huge cookbook but the recipes included are the ones most people do seem to favor. When I read the recipe for shrimp toast I was thinking that no way would this taste like anything I'd get in a restaurant, it was too easy. As my sons and I chowed through the toast I kept thinking, wow, I made this! wow! and it was as good, if not better, than any restaurant.

We have a place here, pushcart dim sum, that is delicious (and fairly pricey) At home, from this cookbook so far, I've made the ribs, the black bean clams, and the pork bun filling, and it's all been really doable. I am not a stranger to Chinese cooking, I've been doing it for many years, but I still like to eat out because restaurant food is just different, and now I am making food that tastes like I ordered it from our favorite Chinese take out.

Pros:
well laid out recipes with ingredient list and directions that are easy to read and follow
Pictures of every recipe
pictures of some of the trickier techniques
a good basic explanation of techniques and ingredients in the front of the book
delicious easy recipes

Cons: none that I've found. quibbles- I like plain white background paper but that isn't really star reduction worthy.

*ETA April 12, 2012. I can't tell you how much I love this book. Everything comes out delicious and looking pretty much like the picture. Out of 14 chinese cookbooks this has become my go to book. I recently did a cook book purge and got rid of over 300, including several Chinese, I just didn't need them anymore because this is the book I turn to. I make something from it weekly, and it's such a winner. Make this your fist Chinese cookbook, or your last, either way you will be happy you bought this book.

The Title says it all..Easy!!!

Anyone who has wanted to learn to cook Chinese food, but felt intimidated by the indgredients, should definitely buy this cookbook!!

My daughter gave me this cookbook, and I absolutely love it! I have had several Asian cookbooks over the years, but always found them hard to understand,and find some of the ingredients, so I basically gave up trying Chinese recipes. In her cookbook Bee describes the ingredients, shows you what they look like with incredible pictures, and where to find them if your local store doesn't have what you want....how easy is that!!
Now i am cooking chinese inspired dishes like an expert, all because of Bee!!!

The recipes are easy and delicious

I should add that they are easy if you already have a pantry stocked with the necessary sauces and spices but that doesn't take too long if you don't. Plus, if you do not live in an area where there is easy access to some of the items needed for the recipes, there are plenty of online resources to order from.

I initially bought this book just to support Bee Yinn Low because I felt I needed to repay the incredible generosity she offers with her recipes on her website: rasamalaysia.com. I found her site while looking for tasty and easy to create recipes after I found out that I was wheat and gluten intolerant. Without exaggeration, every single recipe that I have made on this website has been outstanding to the point where I am excited for guests to come over so I can wow them with what I have learned to make. The same goes for the recipes in this book (although I have just started out). Oh my god the Sichuan Spicy Chicken - drool. Black Bean Sauce Chicken - double drool. I have to adjust some of the recipes because the sauces or ingredients have wheat in them but they still come out excellent.

I have have come to feel after trying her recipes that most cookbooks under season their recipes so that they never come out rich or flavorful enough to stand up against restaurant-level dishes. This is not the case with the recipes in this book and on the website. Plus, in the book Bee Yinn Low goes into important details about cooking techniques that I hadn't known about before. One of my favorite tricks of the trade that I have learned (just about told everyone I know) is to tenderize chicken in baking soda for ten minutes before rinsing and stir-frying it. I have always wondered how to get that moist texture from chicken that you get in Asian restaurants and now I know.

About the Author
Ellie Whitney, PhD grew up in New York City and received her B.A. and Ph.D. degrees in English and biology at Radcliffe/Harvard University and Washington Universities, respectively. She has taught at both Florida State University and Florida A&M University, has written newspaper columns on environmental matters for the Tallahassee Democrat, and has authored almost a dozen college textbooks on nutrition, health, and related topics, many of which have been revised multiple times over the years. Not for National Mah Jong league play

This book says it has a section on American mah jong and alternate rules, but none of it has anything to do with what is played at National Mah Jong league games. The title should specify that. It is useless to me now, but this version of the game sounds very interesting and challenging. My star rating is meaningless, too, since I don't know how to play japanese mah jong and have no one to practice with.

This book covers all the questions anybody would have about this complex game. I've searched all over the internet for answers but most rules and gameplay written on line seemed like poorly translated rules from Chinese or whatever with many mysteries left unturned. This book is great and with minimal reading gets you playing in no time.

About the Author
Lotta Carswell Hume lived in western China for over twenty-two years and during that time she heard and collected many of the traditional tales of China and Tibet. Lotta's wish to make these fascinating stories available to people all over the world is realized in this book, so that they may be enjoyed just as her own three children enjoyed them with their Chinese playmates.

Lo Koon-chiu is a well-known children's book artist and a graduate from the Canton Technical College of Arts. Lo Koon-chiu also studied drawing and water color under a number of famous Chinese painters. Lo Koon-chiu has supplied more than ninety beautiful illustrations, all done in the classic Chinese brush style, to give this book a wonderful visual charm.

A most favorite childhood collection of stories

I have marveled at the incredibly lush and beautiful illustrations and carefully crafted stories in this collection since I was only five or six years old. This book collects magic within its pages. Any reader will appreciate these fairy tales and children's fables , cultivated from all corners of China and Tibet. A wonderful gift for any bright child - even given to a young child, the illustrations alone will capture their imaginations and stimulate their thinking and cultural awareness. Enjoyable and rewarding good night story reading for young and old alike. This book has earned a permanent and nostalgic place in my library.

Must have book about Chinese Culture for Children

Many children's books don't bridge the gap between being full picture books and full chapter books very well. This book is perfect for reading to older toddlers as well kids reading on their own once they are older. Mrs. Hume's collection of traditional stories from China are retold well and the illstrations by Mr. Lo are beautiful conveying energy, emotion and subtlety. Almost every single page has an illustration to maintain the interest of younger children being read to and the full-color illustrations are marvels of detail.

A nice touch is that region of each story is listed so readers can know where a particular story comes from in China. If you are interested in teaching your child about Chinese culture this book is a great acquisition, I know my daughter asks me to read from it every night even though she's heard all of the stories multiple times and I look forward to reading it because it's perfect for parents and kids

Very well done book. A fitting work for a contemporary leader of tropical modernism. I've never seen any of these structures for myself, so I can't comment on the photographic fidelity or representation, but the book itself is lovely.

Wolfgang Haddamitzky has worked in Olso and Tokyo on the staff of the German Cultural Institute (Goethe Institute) and as a librarian of the East Asia section of the Berlin State Library.

Mark Spahnhas a background in mathematics, engineering, and computer science. He worked for many years in Japan as a teacher, computer magazine writer, programmer, and translator. He currently lives in the United States, where he is active as a translator and consultant.

Wolfgang Haddamitzky and Mark Spahn are the authors of numerous language learning and reference books, including A Guide to Writing Kanji & Kana (Book II), Kanji & Kana: A Handbook of the Japanese Writing System, The Learners Kanji Dictionary and The Kanji Dictionary, all of which are available from the Tuttle Language Library.

Logical, comprehensive approach to kanji self-study

After hitting a plateau in my Japanese studies, I realized that a solid grounding in kanji was really holding back my progress. I knew that I needed a systematic approach to the 1,945 jyouyou characters and recalled that this series had been used as the kanji textbook at my alma mater, Princeton University, in the Japanese language study curriculum. I worked this two textbook series for about 4.5 years and it has really paid off (e.g., JLPT kanji tests are a snap, even level 1). The ordering, while different from most other kanji instruction orderings, flows nicely and doesn't overwhelm the student with too many similar kanji in a row (e.g., it doesn't group by radical and present every character containing that radical). Granted, some fairly common characters aren't introduced until much later in the series, but this is a small sacrifice for an ordering that flows and supports systematic recall.

If you can speak basic Japanese and can read some characters -- but are coming to terms with the fact that you are going to have to learn the jyouyou sooner or later -- don't hesitate: by this series and get going. If you have zero experience with Japanese and are looking for survival skills in kanji and are living in Japan, I'd suggest using the Helsig approach, which has you learning basic kanji meanings before readings and written style. After all, what good does knowing the readings for "danger: slow down" characters on a sign if you don't know what they mean?

BTW, I often hear students asking why bother investing in learning how to write the characters by hand given that most writing is done on computers anyway. Don't fall into this trap: there is no better way to cement a characters morphology and meaning in your memory than learning to write. It has worked for students of the graphology for millenia -- it will work for you, too.

Great book!!!

I am 20, and I have been trying to learn Japanese off and on since I was 16. Recently I have tried to get back into learning it and this book has been the most useful so far, for one main reason, it has spaces for you to write the kanji, the hiragana, and the katakana. For years I have been trying to learn the Kanji by just looking at them, that did not work so well, but this system in the book of drawing them out has finally help me to remember them. Maybe I should of just got a kanji dictionary and some loose leaf paper. Then again, most other kanji dictionaries don't have stroke order and also the box shapes did help me to keep my kanji from being to sloppy.

The book also has samples of words the kanji are used in, which also helped me. Since most Japanese words are hard to remember, knowing the kanji that make them up helps make me learn the words.

Learn to write Japanese

I tried many books, and this is the best I could find. It starts with hiragana. With each character you learn, it teaches you words using combinations of characters you previously learned. The next section is katakana, and it's the same thing: combinations of previously learned characters. The last 75% of this book is kanji, and once again, the combinations are only with kanji characters you have previously learned. The order of the characters differs from the way many text books teach you, but it is well structured.

Some kanji books I've used tried to teach by relating the character to a picture. This might work for young children, but it doens't work for me. I learn by structured lessons.

The majority of the space on each page is made up of empty squares for you to practice writing. This is useful because you should be attempting to mimic the example character. With every square, you will write more like the example. This book will cause your kanji to be complimented by Japanese people because of how neat it is. Also, the more times you write a character, the more times it will be cemented into your head.

Using the index in the back of the book, you can find any character in the book. When I'm writing my homework assignment and I come across a kanji character I don't know (or don't know very well), I look it up in the index and practice writing it about 5 times. Then I move on with my assignment. Look up a character 3 or 4 times and it is yours to keep.

This book will not teach you Japanese. It is designed to accompany a text book, and it's best used side by side with your homework assignments. I recommend this for beginners, and also for those aspiring a 3 or 2 on the JLPT. Do not attempt to learn Japanese without this book. The price is justified.

About the Author
Fritz van Briessen studied literature, art history, and philosophy at the universities of Heidelberg, Rochester (New York), Munich, Berlin, Giessen, and the Sorbonne. He traveled widely in Asia, and lived in Shanghai, Beijing, and Tokyo, where he served as Counselor of the German Embassy. He actively pursued a lifelong interest in Asian painting, including several years of intensive study with the Beijing landscape painter Pu Chuan, and possessed a unique insight into the art. Van Briessen lectured widely on East Asian painting in Europe and North America.

This is the best generally available book on Chinese and Japanese ink-painting in English of which I am aware. Why? Because it is not, primarily, a "how to" book. Yes, there are extensive examples of specific brushstrokes and characteristic forms and techniques, however they are by way of explanation and illustration, rather than instruction. There is much talk of history and aesthetics, but from a practical perspective; this is not, primarily, a book of art history or criticism. Rather, it looks at those things from the point of view of a painter, rather than an academic. While it's not an easy read, I would recommend this every bit as much for beginners as those with more experience.

So, why would this be useful for the beginning painter? While some authors would have you believe that Asian ink work is rooted in a spontaneous expression of feeling, and/or that a meaningful piece of art can be created with just a few, easily mastered, brushstrokes, these are extreme oversimplifications of the actuality of Asian art. Tossing a bit of ink on some rice paper may be spontaneous, but it isn't the same as the Spontaneous school of Chinese painting. In reading this book, which is admittedly dense and occasionally dry, the reader can gain a strong background in the traditions and aesthetics of ink painting. While learning basic brush control from a teacher or how-to book, "The Way of the Brush" will give you not just context and history, but an understanding of how to compose and construct a work -- how to put those brushstrokes together.

It could be said that this is not a book about how to paint in the Chinese and Japanese style, but how to look at a painting in the Chinese and Japanese style. In doing so, it also points the way towards seeing like a brush-painter. Unless you can see, not merely with your eyes, but with your mind, it is impossible to make the jump from brushwork to painting, from technique to art.

Excellent Chinese brush painting book!

This is one of the best books about Chinese painting for those who want to understand not just Chinese painting techniques, but also something of the history and variety of traditional Chinese brush painting. The one drawback is the usage of the outdated Wade-Giles romanization (the book was first published in 1962), but that is merely a trivial annoyance compared to the wealth of information the author provides. Most instructional painting books are written by painters who focus on their own style, and give no credit to all the masters who have gone before them. This book shows many examples of paintings by master painters (ancient and modern), along with examples from the author's own teacher, master painter P'u Ch'uan. He thoroughly describes the different painting styles, with excellent examples, and many bibliographical references. I especially liked the fact that he gave 7 different versions of translations of "the Six Principles" of Hsieh Ho; by combining the common threads in all of them, their real meaning becomes clearer.
Another subject he talks about, although briefly, is the importance of understanding brush strokes in order to be better prepared to deal with forgeries and copies. This subject is almost universally ignored in books on Chinese painting, and yet it is very important. I have seen a painting in a catalog from one of the big auction houses that on first glance looked like another one of Li Ke-ran's many water buffalo paintings, and was attributed to him by the (anonymous) seller. Upon closer scrutiny of the brush strokes used, it was obviously a fake. And I am by no means a true expert.
If you are a beginner with no teacher to help you, then you will probably need other books, too. But for anyone who wants to learn about the history and traditions of Chinese painting, this is the ideal book.

This is the second copy of this book that I bought. I purchased second as a gift for artist friend after buying one for myself. We are both painters; but, this is the type of book anyone can enjoy reading for its philosophy and appreciation of Asian art. A visual artist can learn much from the techniques of brush painting used in China and Japan. It is both poetic and visual.
